Perfectly Roasted Asparagus

A quick-fix side dish perfect for an everyday family dinner, but elegant enough for entertaining. Learn how to roast asparagus to a perfect al dente and spruce it up with a vibrant red pepper relish.
Roasted Asparagus:
Asparagus, one bunch
Tbsp Olive Oil
Kosher Salt and Black Pepper
1 Lg Lemon
Red Pepper Relish:
Tbsp Olive Oil
Red Bell Pepper, finely diced
Shallot, minced
2 tsp Whole Grain Mustard
1 tsp Sherry Vinegar
2 tbsp Olive Oil
Kosher Salt & Black Pepper
A recipe featuring perfectly roasted asparagus, plus a red pepper relish just in case you'd like to spruce things up a bit.

Preheat oven to 400°
Have ready a large rimmed baking. Trim asparagus by removing the tough ends, then lay on baking sheet and drizzle with olive oil. Season asparagus with 1 tsp kosher salt and ½ tsp black pepper, the zest of one lemon and toss to evenly distribute seasoning. Roast in the oven for 10 minutes. Once removed from the oven, cut lemon in half and squeeze juice over the asparagus. Toss once again.
Have ready a sauté pan over medium high. Saute bell pepper for 4 minutes then add shallots and sauté for another two minutes. Remove from heat and allow to cool. In a bowl, whisk together mustard, vinegar and olive oil until emulsified. Season dressing with ½ tsp kosher salt and pinch of black pepper. Add sauteed veggies to bowl and stir to mix evenly. Serve over roasted asparagus and enjoy!
