Watermelon & Arugula Salad with Serrano-Lime Dressing | Recipe

A summertime salad featuring arugula, watermelon, cucumbers and feta cheese. Serve with a quick and easy homemade serrano-lime dressing on the side.

For the Serrano-Lime Dressing:

1/4 c Fresh Cilantro, chopped

3 Serrano Peppers, seeded and diced

1 Shallot, chopped

1 Clove of Garlic, chopped

2 tsp Honey

Juice of a Lime

1/4 c Olive Oil

For the Salad:

6 c Baby Arugula, washed and dried

3 c Watermelon, cut into 1/2" cubes

1 Cucumber, sliced thin

1/3 c Feta, crumbled

2 tbsp Pepitas (Pumpkin Seeds)

Add all ingredients for the dressing, except for the olive oil, into a blender or a food processor and puree. With the motor running, drizzle in the olive oil. Set aside until ready to serve.

Toss together ingredients for the salad, drizzle with Serrano-Lime dressing and sprinkle with salt and pepper. Serve immediately.

Serves 4
