Make-Ahead Cinnamon Iced Coffee

How to easily make cinnamon-infused iced coffee at home.
This coffee is a serious life-saver for me. Being able to walk to my refrigerator, pull out a pitcher of coffee flavored with aromatic cinnamon is such a convenient and delightful little perk in my day. Once my little angel babies came along, the days of one, morning coffee were long gone. My darling little rascals can be draining, in a good way, but also in a I-just-want-to-plant-my-face-in-a-pillow-and-sleep-for-days kind of way. Another little tid-bit regarding my darling children: I don't particularly love shuffling them in and out of the car. Especially not for a five minute venture...even if it is into my favorite coffee shop. I am sorry, did I say venture? I meant to say adventure. My children are 2 and 6, so moms, I know you feel me on this: if there isn't a drive-thru we are likely not going. A mother's sanity is an important thing, after all.
12 c Distilled or Filtered Water
3/4 c High Quality Ground Coffee
1-2 Cinnamon Sticks
2 tbsp Granulated Sugar, if desired
Add water and coffee to coffee-maker according to your model's instructions. Place cinnamon stick/s in carafe and brew. Once brewing cycle is complete, remove carafe from unit, add sugar and stir, if desired. Set aside until lukewarm, transfer coffee along with cinnamon stick to a pitcher and refrigerate for up to a week. To serve, pour over ice and top with half-and-half, if desired.
