Raspberry Mascarpone Dip | Recipe


Raspberry Mascarpone Fruit Dip

A quick and easy fruit dip featuring Mascarpone cheese, greek yogurt and raspberry preserves.

If I have learned anything after years of entertaining, it is this: Women. Love. Fruit. So these days, if I am hosting a gathering geared toward my lady friends, a fruit platter will certainly be making an appearance. For an extra special touch, I like to serve this dip alongside it. It is tart, sweet and perfect for dipping just about any fruit.

16 oz Mascarpone, room temperature

1/4 c Cream Cheese, room temperature

1/2 c Raspberry Preserves

1/3 c Plain Greek Yogurt

Zest & Juice of One Lemon

1/4 c Fresh Raspberries, rinsed and patted dry

In the bowl of a stand mixer fitted with the whisk attachment, mix together both the Mascarpone and cream cheese until smooth. Alternatively, use a mixing bowl and a handheld mixer. Add the remaining ingredients and mix until smooth once more. Place fresh raspberries across the top, cover with plastic wrap and refrigerate until chilled through, one to two hours.
