Homemade Garlic Bread

A simple compound butter and a loaf of french bread is all you need to make a killer garlic bread at home.

The discovery of compound butters changed my life. Ok, well maybe, that's a bit of an exaggeration, but it did make it more enjoyable. At least at meal time. If the terminology in itself gives you a fright, fear not. Compound butters are simple and quick to make, and the applications are almost endless. You can use them to top a crusty loaf of bread, stir into pasta for a quick weeknight dinner or smear it on poultry or steak as a flavor enhancer.

In this case, we are using a simple and versatile compound butter to create garlic bread. Who doesn't adore garlic bread? Even the kiddos love the stuff. To say my husband and I use this recipe often would be an understatement. Garlic bread pairs well with so many things and is my pasta buddy go-to. Enjoy.

1 pound day-old French stix (or white, hearty bakery bread), cut on a major bias into 1" slices

1/2 cup unsalted butter, room temperature

2 tablespoons olive oil

3-4 tablespoons freshly grated Parmesan cheese

2 cloves of garlic, crushed or finely minced

1 1/2 tablespoons freshly minced Italian parsley

Generous pinch of Kosher salt

Preheat the oven to 425° and have ready 2 sheet pans.

In a small mixing bowl, whisk together the butter and olive oil. Stir in the Parmesan cheese, garlic, parsley and salt. Apply a thin layer of the mixture to each slice of bread and transfer to the baking sheets. Bake 5 minutes, or until golden. Serve right away and enjoy.
