Five Salads Not for The Birds

Five exciting salad recipes to keep you healthy, full and not dying of boredom.

Ok, here's the deal: Summer is just around the corner and it's time to get a little more serious about the gym, and cut back on the carbs. UGH. Diets can be the worst, and I'm not really the "disciplined" type, but that's ok. Let's look at the glass half full. Healthy things taste good too, and ya know what? That doesn't sound half bad. But, TRUTH: If I'm going to eat salad for a meal, I'm going to need it to have a little pizazz. A little variety and whole lot of flavor. Here are five of my favorite, go-to salads when I want to be healthy, happy and satisfied all at the same time. Enjoy!

A summertime salad featuring arugula, watermelon, cucumbers and feta cheese. Serve with a quick and easy homemade serrano-lime dressing on the side.

A beautiful and healthy salad topped with TAK's Bruschetta Chicken Salad and sprinkled with salty Ricotta Salata and toasted pine nuts. Finish with a drizzle of olive oil and balsamic vinegar. Simple. Easy. Delicious.

Salad featuring turkey cutlets pan-seared in bacon fat, roasted grape tomatoes and an easy avocado-green goddess dressing made in a blender.

An ideal salad for spring and summertime entertaining, featuring strawberries, goat cheese and candied pecans.

Fried green tomatoes on a bed of watercress, topped with goat cheese, fresh corn and a zingy roasted red pepper dressing. Perfect for summertime entertaining.
