Ok, here's the deal: Summer is just around the corner and it's time to get a little more serious about the gym, and cut back on the carbs. UGH. Diets can be the worst, and I'm not really the "disciplined" type, but that's ok. Let's look at the glass half full. Healthy things taste good too, and ya know what? That doesn't sound half bad. But, TRUTH: If I'm going to eat salad for a meal, I'm going to need it to have a little pizazz. A little variety and whole lot of flavor. Here are five of my favorite, go-to salads when I want to be healthy, happy and satisfied all at the same time. Enjoy!
A summertime salad featuring arugula, watermelon, cucumbers and feta cheese. Serve with a quick and easy homemade serrano-lime dressing on the side.
