Ginger Lime Martini | Cocktail

A slightly sweet and tangy martini featuring a homemade limeade, rum and ginger liqueur.
My husband and I have a favorite spot in town, where the food is great and the cocktails are just as good. The bartenders are always experimenting and coming up with trendy new ways to serve up a tasty concoction. One evening, they brought to my attention a liqueur I had never seen before. It was a wonderful discovery to find out the liqueur was infused with ginger. It just so happens that ginger plays well with many other flavors and I knew I was in for a hay day in the mixology department. Cocktail testing can be quite fun, if you get my drift. One of my favorite combinations was ginger and lime, and after a little experimenting of my own, I came up with this zingy adult beverage. Please, enjoy.
For the Limeade:
1 1/2 cups water
1/4 cup of granulated sugar
Juice of 2 limes
For the Cocktail:
1 lime
3 ounces Limeade
1 ounce light rum
1 ounce ginger liqueur
1 ounce coconut water
In a small sauce pan over medium-high heat, combine the water, sugar and lime juice. Allow to boil long enough for the sugar to dissolve and remove from the heat. Set aside and allow to cool completely.
If you would care to garnish your cocktail, use a zester and run it longways across the lime. Set aside the citrus strips until ready to use. Cut the lime in half lengthwise and cut each half into thirds. Set aside until ready to use.
Fill a cocktail shaker with ice and top with limeade, rum, ginger liqueur and coconut water. Squeeze in the juice of one lime wedge. Cover the shaker and shake vigorously for at least 30 seconds. Strain the cocktail into a chilled martini glass, garnish with zested strips, serve and enjoy.
