Candied Pineapple Sour Cocktail

A grown-up cocktail that makes you feel like a kid again: Featuring vanilla vodka, raspberry liqueur and pineapple.

If you are one of those people who just truly detests the flavor of booze, yet likes to have a cocktail in hand every now and again -- this one is for you. Oh...and me too. I don't think I will ever become accustomed to the harsh taste of liquor. I guess it's not a goal I necessarily see myself striving for...which is probably a positive thing....so I'm going to go ahead and say that's ok. Turns out, pineapple juice can be a gal's best friend. It manages to cloak the vodka in sweet and sour goodness, making for a much more enjoyable sipping experience.

When I was recipe testing for this delightful little ditty, the flavors kept reminding of something...something tangy, sugary, fruity and juicy. And, then it hit me: Starbursts. This cocktail tasted remarkably similar to those bright and happy, chewy little squares that were such a treat to eat as a little girl. Now that I have my big girl pants on, I'll gladly consume my candy in liquid form. Please, enjoy.

Ingredients:

1 ounce vanilla vodka

1/2 ounce raspberry liquor

4 ounces pineapple juice

Squeeze of a lime wedge

Pineapple chunks or candy for garnish (optional)

Method:

Add vanilla vodka, raspberry liquor, pineapple and lime juice to a rocks glass. Stir and top with ice. Serve and enjoy.
